DUBAI– UAE-based Emirates Airline (EK) has introduced an enhanced caviar service for its First Class customers, offering unlimited servings of premium Ossetra caviar on all routes.

The airline has seen caviar consumption rise more than 30% year on year, with its busiest routes for the delicacy including Dubai (DXB) to London (LHR), Paris (CDG), Sydney (SYD), Moscow (DME), and Bangkok (BKK).

To highlight the refinement of the service, Emirates (EK) has built a dedicated caviar ritual that ensures the delicacy is stored, transported, and served with the utmost care. From chauffeur-driven delivery of tins to dedicated onboard presentation, every step is designed to maintain freshness and elevate the dining experience.

Emirates First Class Caviar Demand

Caviar has long been considered a culinary treasure, prized for its rarity, rich flavor, and refined texture. Harvested from sturgeon roe, each pearl delivers a balance of delicate and briny notes, buttery undertones, and a smooth finish that has captivated gourmets for centuries.

Emirates offers First Class travelers a ceremonial service to honor this tradition. Cabin crew, dressed in white gloves, begin by setting a crisp linen tablecloth before arranging accompaniments such as melba toast, blinis, egg yolk, egg white, chives, white onions, sour cream, and lemon.

The caviar is served in an Emirates-engraved bowl, unveiled in front of the customer for added flair.

To complete the experience, the delicacy is paired with Dom Pérignon champagne, exclusively available on Emirates flights. The champagne’s toasted brioche and almond notes complement the salty, nutty character of the caviar, while its crisp acidity cuts through the creamy mouthfeel.

Customers are also presented with a mother-of-pearl spoon, preserving the caviar’s flavor by avoiding oxidation from metal cutlery.

The caviar Emirates serves comes from the Acipenser baerii, commonly known as the Siberian sturgeon. Medium-sized and ranging in color from dark grey to brown or black, this roe is valued for its smooth texture and clean, mildly briny flavor.

Native to Siberia’s river systems such as the Ob, Lena, and Yenisei, the Siberian sturgeon has become a sustainable option for aquaculture. Unlike slower-maturing species, it begins producing roe within five to seven years, making it a practical choice for farming.

This balance of quality and sustainability makes it the backbone of the modern caviar industry and a natural fit for Emirates’ global First Class service.

Caviar for Emirates flights is delivered to the Emirates Flight Catering Facility (EKFC) in Dubai three times a week.

Each delivery arrives in refrigerated vehicles, maintaining a temperature below 5°C. For final transport to the aircraft, Emirates assigns its own dedicated chauffeur-driven vehicle to preserve the cold chain up until loading.

On international routes, Emirates-approved caterers work with the airline’s supplier to ensure the same quality and handling standards. This strict logistical system allows First Class passengers to enjoy complimentary unlimited caviar anywhere in Emirates’ network.
